Indian food is not all the same, but reflects the different conditions spread across this vast land populated by over a billion people.
One of the most respected is the Punjabi style, which owes much to the geographical position of the Punjab itself. A territory about the size of the UK set in the foothills of the Himalayas with rivers running into lush green fields.
Punjabi Cuisine requires the skillful blending and cooking of meats, chicken, fish and vegetables with herbs, spices and other ingredients to produce a rich taste and smooth texture.
This special blend of rich, flavoursome curries, tandooris, breads and basmati rice make Punjabi cuisine one of the most popular regional cuisine throughout India and the world.
Spices such as coriander, cumin, cloves, cinnamon, cardamon, black pepper, fresh green chillies, turmeric and mustard seeds are regularly used in Punjabi cuisine. However these spices do not dominate the dish but instead gently promote the primary ingredient, meat, fish or vegetables.
